BBQ FOIL PACKETS WITH GARLIC SAUSAGE & VEGGIES

There is nothing that says Summer than a good BBQ or a Campfire!  Am I right?  Well my friends your going to love this recipe whether your a Camper or just like to sit at a cottage by the lake.  This is the most adaptable meals and super easy , quick clean up and less mess so you can spend your time where your wanting to be and not in the kitchen.

Enjoy this and experiment, you can pretty much throw everything but the kitchen sink in these amazing little packets of flavour.  Plus the kids love them too!!

Garlic Sausage & Veggies In Foil Packet

Ingredients
Foil Packs
  • Heavy Duty Foil
  • 16 ounces Smoked Turkey or Chicken Sausage, coined
  • 2 cups (~3/4 pound) baby red potatoes, quartered
  • 2 cups (~3/4 pound) green beans, trimmed
  • 3 corn on the cobs, sliced
  • 4 cloves minced garlic
  • 4-6 tablespoons unsalted butter
Seasonings
  • 1 teaspoon paprika
  • 1 and 1/2 teaspoon dried parsley
  • 2 teaspoons Italian Seasoning
  • 1/2 teaspoon EACH: garlic powder and onion powder
  • Salt and pepper
  • Optional: fresh parsley, freshly grated Parmesan cheese
Instructions
  1. If using the OVEN; preheat the oven to 425 degrees F. If GRILLING, prepare the grill by heating to medium-high heat. Prepare 4-6 large sheets of HEAVY DUTY foil; lightly spritz with cooking spray. ALTERNATIVELY if you’d like to avoid cooking in foil and won’t be grilling: line a large sheet pan with parchment paper (clean up is just as easy!)

  2. Prep the ingredients: wash and dry the veggies. Coin the sausage. Slice the baby red potatoes in half and then half again. Trim the green beans. Shuck the corn on the cobs and slice into thick coins.

  3. Add the prepped sausage, corn, green beans, potatoes and garlic to a large bowl. Toss with all of the seasonings (paprika, dried parsley, Italian seasoning, garlic powder, onion powder, and a generous sprinkle of salt + pepper if desired). Toss until well combined.

  4. Divide the mixture evenly among the prepared sheets of foil (4 sheets of foil for larger portions and 6 for slightly smaller portions) and place 1 tablespoon of butter in each packet or prepared baking pan (separate pats of butter evenly on top). Seal the foil packs tightly so no air escapes, but do not double up foil (only one sheet of foil per pack).

  5. GRILL: Grill for 25-30 minutes or until veggies have reached desired tenderness (flip the foil packs at the halfway point and check for doneness to insure your grill is hot enough). BAKE in foil packs: Bake for 30-40 minutes (at 30 minutes veggies are crisp; 35 is perfect for us; 40 is very tender veggies). You can set the foil packs right on the oven rack or on a sheet pan for easier removal from the oven. BAKE ON SHEET PAN: Bake for about 30-35 minutes, flipping/stirring the ingredients once at the halfway point. **See additional cooking methods in the last paragraph of the post)**

  6. Carefully open the foil pack expecting steam to be released. Garnish if desired with fresh chopped parsley, any additional salt/pepper, and freshly grated Parmesan cheese on the beans, potatoes, and sausage.

  7. Enjoy immediately!

Wow What A Week Indeed

Last Monday this amazing program started.  Now I know you all are thinking well I’ve done lots of programs and I say the same thing.  Well my friends I’m here to tell you that , that is not the case.  The 80 Day obsession is in it’s own unique way.  In fact I highly recommend it for the simple fact that it builds you up for this Bad Boy.  Now I’m not saying that if your a beginner, Lord No that you should feel in the least way intimidated.  The best part is that there are modifiers ,  heck I even Modified the modifier ( is that even possible).

I was so excited to try this mostly because it’s only 30 min a day instead of 60 min. Plus you get 3 days off. Which I told myself I was totally going to run on those 3 days lol. Well I ran once and the other two I spent recovering.  I found that I want to listen to the Trainer( Joel) instructions so that way I will get the best results!

Day 1 was good,  was super excited to get started. It was challenging and I had to modify but It went so quick and poof I was done.

Day 2 was Interval training.  I love how this worked plus it made me feel bad ass after wards.  A lot more doable with only 30 min.  I still sweated like a fat man in  a sauna but it was good.

Day 3 was a rest day which strangely enough I was like ” awe just getting pumped”  but I was glad it was a rest day it gave me time to work on my running, which is my passion for sure.  Drank my recover and on with my day.

Day 4 was Back and Shoulders I believe and boy oh boy was that one an eye opener.  I felt that , for sure, but what I felt and noticed was that I am actually feeling muscles I never could before!! BRING it ON Joel I got this.

Day 5 was Leg Day and that was one of my absolute favourites. But after today it went down a few notches lol.   It was good don’t get me wrong but boy was it tough.   I had to modify the triple bear. which pissed me off , but it’ll get there.  ITs a work in progress for sure!!  Besides I don’t want to be at the end of the chapter I’m enjoying the ride!!

Can’t wait to see what WEEK 2 will be like !!  Here’s to day 1 !!

SECRET TACOS

I LOVE TACO’s , I mean I could literally eat Taco’s everyday.  Now that I’m starting to like Avocado oh boy! Watch out, guacamole!  I’m so glad that there is a New program that not only  doesn’t require you to workout and you can still lose weight, in fact a lot of weight.  It’s such an easy program and what best is that you don’t have to cut out a food group and you can still have your wine.  Sounds too good to be true right?  Well this is just one of the recipes and it’s all about TACO’s!

What if I told you this recipe includes a secret ingredient that is perfect for those fussy eaters, because your adding more veggies to it!! Yep you heard me, I added cauliflower rice to the meat and man oh man even my fussy mom couldn’t tell the difference.  If you can believe that.  Miss Meat and potato lol.

Go ahead and give this a try and I guarantee you’ll be shocked at how no one will notice and you won’t lose the taste or consistency.

Stop Letting Other’s Opinions Squash Your Dreams

I think one of the downfalls about being a woman is that we tend to worry about what others think of us , or their expectations of us. Without looking inside and living what we need to do to make our life the best that suits us.

Making our dreams and goals actually happen, instead of wishing “ Someday I would like to ____”. Or too afraid to even try!

So how do you do that? How do you start, when you’ve done this most of your life. It’s time for change my friend.

I listened to a podcast by @Rachel Hollis Called Rise , as well as her book “GIRL WASH YOUR FACE”  and it really hit home to me because yes unfortunately I was one of those people , so with what she said “ someone else’s opinion of you is none of your business” ,  That really opened my eyes and I hope

it does for you too.
You create what you need to create because you have the gift to create it.
You can’t make people like or understand it , you have to understand that their opinions will only matter if you let it.

If your going to work on your dreams and what you want to achieve , you’ll have to make a decision on what you want most of making it happen or worrying about what others think! I hope this post will encourage you to get out of thought and use your energy to create and achieve , rather than your energy on the negative and slowly kill your dreams.

Choose you! Choose your dreams and not let anyone make your decisions for you!

Summer Nights

My favourite time of day is the end of the day when I can reflect and see what I accomplished and didn’t accomplish and what I’m going to do tomorrow to improve and grow from today!
One of those ways is with learning and reading my personal development , I know what your thinking but honestly before 2 years ago if you had asked me to read a personal development book 📚, I would have told you to stuff it in your ear 👂
Now what I am making time to read and grow instead of binge watching Netflix or mindlessly scrolling. Don’t get me wrong , I like the odd show , and trust me NETFLIX will still be there when I am successful and am able to have more time , thanks to my hard work today! This isn’t hard work , it’s training yourself to be disciplined and work on your life not someone else’s. making dreams come true only happens when you out in the effort , you get in life what you put in right?
So “WHY NOT YOU?” My husband has the mindset of a worker BEE 🐝
Not that it’s a bad thing , but to him it’s get up , go to work , do what you have to do then go home 🏡
My mindset is way different , I want more in my life , I want to not worry about bills , or debt or retirement. I want to work on my dreams and be happy , my heart is full of passion and energy to help others succeed as well , whether it be their health or their success 💰💵 So sorry Netflix, Cable Tv and Romance Novels , this lady has bigger dreams to chase and make happen , if you feel the same way I do, you can message me or click on my bio I’d love to work with you to make your dreams happen!! Remember your NEVER TOO LATE & YOUR NEVER TOO OLD , you just have to START
