Ok, how many of you love to eat chocolate? How many of you love to eat chocolate for breakfast? Well, this recipe is my absolute go to breakfast of all time! The chocolate pancakes are amazing! And even best yet they are so filling that I usually have to force myself to eat after I have had two of these. The rule of thumb for clean eating is that you eat every 2-3 hours, well I am guilty of not always following this rule. But these pancakes are truly a show stopper. They keep me filled for quite a while and the fact that I use my BB8 Pancake maker just makes it all the better. Now I have used vanilla Shakeology too and with a little cinnamon, it tasted really good as well. But I usually stick with my chocolate. One purple container of mixed fruit and presto there’s my breakfast.
Chocolate Shakeology Pancakes:
- 1 scoop of chocolate Shakeology
- 1/3 cup of Oat Flour( put oatmeal into the food processor, to pulse it into oat flour)
- 1/2 cup of egg whites
- 1 tsp vanilla extract.
- optional ( almond milk or water) the batter tends to get pretty thick. So I add that sometimes to make it easier for pancakes.
- 1 purple container or cut up strawberries, blueberries, etc.
Mix all 4 ingredients in a bowl stirring until made into a batter, again you can add water/almond milk to make it easier and more runny for pancakes. Spray the pan with cooking spray and voila you have pancakes. While the pancakes are cooking I like to cut up my fruit and fill my purple container. By the time I’m done the chopping usually the first pancake is finished!
