Lasagna Rollups

This is one of those all time favourites, especially with fall fast approaching and we are looking for comfort foods.  Why not have a healthier version so it doesn’t weigh us down and still tastes amazing!  My family especially my daughter’s love pasta and I was always making the traditional style lasagna, but when I started my healthy journey of eating better foods and portion control I didn’t want to miss out on one of our favourites.  As well as sneak in some greens to make up a part of my veggie intake.  I am always on the lookout or hunt for new and exciting recipes and this one fit the bill.

Here is how I made this delicious recipe :

Spinach Lasagna Roll-Ups

This easy, cheesy vegetarian pasta dish puts traditional lasagna on its side with a smaller portion that won’t leave you with a whole pan of leftovers.
SERVES: 8 LASAGNA ROLL-UPS
Ingredients
  • For the filling:
  • 1½ cups park-skim ricotta cheese or I have also used dry cottage cheese
  • 1 cup mozzarella cheese, divided
  • ¾ cup frozen chopped spinach, thawed and drained of excess liquid( I have also used fresh spinach and chopped it up finely)
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh ground black pepper
  • For the remainder of dish:
  • 1 cup marinara sauce
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon crushed red pepper flakes
  • 8 lasagna noodles, cooked ( Optional – whole wheat noodles)
  • Parsley or basil leaves, slivered, for garnish
  • Parmesan cheese for garnish
Instructions
  1. Preheat oven to 350 degrees F.
  2. For the filling:
  3. In a small bowl, stir together all of the filling ingredients (using only ½ cup of the mozzarella and setting the remainder aside.)
  4. For the remainder of the dish:
  5. In a small bowl, whisk together the marinara sauce and spices.
  6. Spread a ⅔ cup of the marinara sauce mixture in a thin layer on the bottom of a 2-quart rectangular baking dish. Set aside.
  7. To assemble the lasagna roll-ups, lay a lasagna noodle on a flat surface. Use a ¼ cup measuring cup to measure out the filling for each noodle. Use your fingers to gently press the mixture into a thin, even layer across the entire lasagna noodle. Gently roll up the noodle from one end of the noodle on the short side. Be careful not to press too hard.
  8. Place the lasagna roll-up, seam side down, in the prepared baking dish and repeat until all the lasagna noodles are filled.
  9. Pour the remaining ⅓ cup of marinara sauce over the tops of the lasagna roll-ups. Sprinkle the remaining ½ cup of mozzarella cheese on top of the roll-ups.
  10. Loosely cover the baking dish with aluminium foil, and bake for 15 minutes. Remove foil, then bake for another 15 minutes.
  11. Garnish with parsley, basil leaves and Parmesan cheese if desired.

Lunch with an Old Friend

IMG_1166One of the things mom wanted most when we came back to London for vacation was to visit with her old school friend Carol.  They have been best friends since high school , and they have always kept in touch. When we lived here and when my parents lived with us at our house. Mom and Carol would go out for lunch or supper and sometimes Mom would go up to Carol’s trailer in the summer for a few days and had a blast.  They would play bingo, and all kinds of Old lady things lol.  They even went to a Celine Dion concert together.  They were quite the Dynamic Duo!

So yesterday Carol and Mom were finally able to meet for lunch and chat! It was so nice to see them hug and chat, it made mom’s day.  Chatting about the old times, and catching up on current events.  Oh and some good food too. It’s surprising that this little restaurant in the mall actually made some really good fish and chips. Mom had eggs and bacon ( of course )

Today Mom and Dad are getting quite a few visitors, my Aunt Gael and her daughter from Toronto,  my step brother Tony and his wife and then finally my Uncle Murray.  I have noticed a change in mom with her behaviour, a lot of this visiting and walking has been taking its toll. So thank goodness for my daughter Eryn, she comes over at night to check in and make sure mom is ok and had her pills. I come over in the morning. Get to hear all the juicy gossip of how it went. I asked her how she was doing and if she was enjoying herself, she said she’ll be glad when she’s back home for some peace and quiet. As well as being able to watch her Netflix. lol.  I think it’s because she wants the Remote for herself.

Strength 35

IMG_1113Wow, did it feel good to do some strength training and to be able to do it outside?! Even better.  This program has pushed me where I needed it and the hardest part especially when we’re on holidays and not in my usual routine. It’s tough, it makes it harder to stick to the routine.  I get caught up with all the other stuff like my husband says ” I have squirrel moments” almost like a kid in a toy store.  I find it hard to focus. But after I do this workout it really helps me stay focused and remember what I love to do and what I have worked so hard to achieve. So I made it my focus and got it done.  As usual, it felt awesome, amazing.  It always makes my day so much better, I guess that’s why I love doing it early in the morning.  Set’s my day right. Do you prefer morning or evening? I find if I wait till later in the day all the excuses start flowing in, Oh I’m too tired, or I can do it tomorrow, what’s one day. The list goes on and on.

It’s funny, I get so many friends that say “Oh my how do you do it?  Get up and do your workout no matter what, you never give up, you have so much motivation. ?” I tell them one thing. It’s simple I have tried so many different diets, and 99% of them I failed. I gave up, it was too difficult.  Talked myself out of doing it. Trying to convince myself it’s my reality of being overweight.  This is the way I should be.  But that came to a point in my life that I knew I had to change, I had to do something. I wanted to be around when my children get married or have children. I knew being in the nursing field that the way I was living,  I might not be there. It literally scared the living crap out of me.

I’m so grateful for that change or shift in my mind that I had to do something. That is how my motivation comes from. Every morning I say to myself as a Daily Reminder:

  • I am AMAZING
  • I can do ANYTHING
  • Positivity is a choice
  • I celebrate my individuality
  • I am prepared to SUCCEED

I was tired of starting over, So I don’t give up! Yes, I’m not perfect I have faults. WE  all do.  But that’s the best part. I have learned that it’s not the end of the world if I have dessert. What I have learned is that MODERATION is key, if I had that piece of cake don’t dwell on it and think it’s over.  Get up early, put on my shoes, put my hair in a pony and focus on what I need to do today to make me feel amazing and energized.  Honestly, 35 min in the morning, getting a good sweat is the best 35 min of my day. It’s my time to myself. My time to focus on what I want for myself. This program is doing that for me, it shows me that I am capable of doing more than I ever thought I could. I am seeing progress not so much in my weight but in my strength and being able to do moves I couldn’t do before! How great is that? Who doesn’t want to feel that?

Date Night

IMG_1128One of the things I never thought I would be doing was having fun at a shooting range. Usually we try hard, but usually, every Tuesday hubby and I have Date Night.  Normally that consists of us going to the movies. But Hubby has found a new hobby of “Target Shooting”  I think he eventually will go hunting. So I told him go on and have fun but there will never be a dead deer hanging in my garage and if and only if you do all meat is to be wrapped before it comes in the house. I have always been firm about that.  But for right now he’s fine with just shooting targets.  Thank goodness, and one of the things I have learned in my personal development is that it’s important to show support and interest in things that our spouse has an interest in. For now, my husband loves guns and target shooting. So one day he was going out shooting and I asked him if I could join him. You know to show support and stuff. That was my intention, but I was surprised to find out how much fun it actually is!  So much so that I want to get my own gun! I even know the name!  The gun I want is a

For now, my husband loves guns and target shooting. So one day he was going out shooting and I asked him if I could join him. You know to show support and stuff. That was my intention, but I was surprised to find out how much fun it actually is!  So much so that I want to get my own gun! I even know the name!  The gun I want is a Ruger .22, I saw a beautiful one and it’s pink too! But my niece said there’s no way I can have a pink gun. So I’ll be happy with a Ruger .22 and leave it at that.

On our vacation this week, my husband set out Date Night to go to a shooting range with an old friend of his from work. So off we went with our .22 rifle and Shot gun. Met up with his friend George and his Fiance Wanda, at the Shooting range which I never knew was there.IMG_1129

We were able to shoot a lot of different guns, one was a double barrel shot gun ( that one was a little scary) I left that for hubby to have fun with.  Then we went to the pistol range, well we actually got to shoot a Colt 45 and let me tell you, it was very scary.  I only shot once and was like “NOPE, I’m done. ” It’s hard to describe, but it was really powerful. Very intimidating. When I shot it and it scared the crap out of me, George apologized and said he shouldn’t have given me a Colt 45 to try for the first time shooting a pistol.  So he brought out a “PINK” .22 pistol and boy that my friends was a lot of fun. I guess I was never meant to be a cowgirl. Or live back in the cowboy days. I don’t think I would have done that well.

George then brought out a gun which was a lot different than any other gun I’ve seen. It was a lot shorter than any rifle but too big to be called a pistol. He called it the “ZOE” which he named from the movie “FIREFLY” there was a character in the movie and her name was “Zoe”, well this was the gun that she used in the movie. Coincidentally my daughter named her kitten Zoe from the same character of Firefly. So, of course, I had to try it out. It was really weird to hold but it was fun too. Loved it. It was a super great night and we get to go out again before we head back to Saskatchewan, in fact, we are going out shooting with Niece and her boyfriend on Friday! Can’t wait for that.  Plus George said we could meet up again before we leave.  Oh and the best part is that he’s bringing some different guns too.
IMG_1150Never in a million years did I ever think I would be spending time at a shooting range.  Or enjoy it. But I’m so glad I went out of my comfort zone and tried something new!  I  never thought I would like it at all, I was only going to apeeze my husband.

Well, I’m sure he thinks, Oh man what have I started. ?

Ontario Humidity

Good Morning! I am sitting here at my make shift desk ( my daughter’s dining room table) and I let my grand puppy outside for a pee and the humidity is so thick out there I found myself thinking about Ice Cream! I have to admit it is one of my weaknesses, well anything sweet is my weakness. So if there are recipes that are a healthy version to help me stay on track and curb that sweet tooth I’m all over that.  That’s one of the reasons why I love Shakeology. It really does help me with my cravings. So I went on Pinterest and luckily I found this awesome recipe that I wanted to share with you!

Anyway, to stay cool and eat healthily I’m all over that. I haven’t come this far in my weight loss journey to throw it all away. Even though I’m on vacation and that’s usually the toughest time, I am still determined to stay on track the best I can. I’m not perfect and sticking 100%, I am only human after all, but I’m certainly not going to throw in the towel either.  It’s called Moderation, those small treats will help with staying on track and not totally go crazy!  So if you’re like me and love Ice cream this recipe will be a sure winner

The Colour Run

IMG_1031One of the most fun runs I have ever had was doing this race. What made it even better was that I got to run with my daughter for her first time. What better run than this one! It was a good run and Omg coloured powder everywhere, loud music, lots of jumping and so much fun.

I highly recommend this run if you’ve never run before or you are an avid runner.  While I was running with my daughter and her 2 friends, we noticed that there were so many different athletes, I say athletes because it doesn’t matter what stage you’re at if you’re out there on the field, you’re an athlete!! Champions were all beginners at one time. They all started at the beginning.  They just never gave up.!
